Cupcake- Cake in a Cup
Cup cakes have become a very popular thing. I am always uncertain as to the difference between cupcakes and muffins, thin stew and thick soup, shepherds pie and cottage pie. I suspect that cupcakes have topping whilst muffins are essentially nudists.
Did you know that you can actually make a literal ‘cup cake’ using a cup and your microwave?
It certainly will not win you accolades in the ‘Great British Bakeoff’ but it is hot and tasty and able to be prepared in under ten minutes.
Probably a fun one to do with the kids too (although don’t blame me if all your mugs subsequently disappear after you demonstrate the method)!
First you will need a sizable microwave proof mug. Most of us have unwanted ones around the place which sometimes are bundled into mothers day gift sets with slogans like ‘worlds greatest cook’ or some such emblazoned across them. I have a special dark cupboard where I hide these after thanking whoever it was that got it for me. Sports Direct do a very good line in mugs that are much too cumbersome to comfortably drink from.
Take your mug and mix an egg in it with four tablespoons of self raising flour, a tablespoon of butter, four of sugar (I forgive you) and a few drops of vanilla extract. What actually is that? Are there farms somewhere with complex milking machines or something? Whatever; it is magic ‘cake joy juice’ as far as I am concerned.
Put your mug baby in the microwave for three minutes on high (who is using any of the other settings?) and viola… one freshly risen mug cake which will make you feel like Rey from Starwars as you attack it with a nearby fork.
